After depulping, beans undergo

① 24hr aerobic fermentation

② 12hr anaerobic underwater fermentation

③ 48hr freshwater soaking.

This removes mucilage while preserving sugars

②無氧水下發酵12小時

③清水浸泡48小時

4. High-Altitude

High-Altitude Volcanic Soil:

Grown at 1,200-2,000 meters, volcanic ash soil provides minerals, contributing to clean flavors and bright acidity.
